Taking Chocolate to the Next Level, Again!

The chocolate category at Caputo's Market is in the process of being totally overhauled. Two chocolates now carried at Caputo's market and lauded by national food critics are Domori and Gobino. A New York Times food columnist said, Domori and Gobino are two of the finest chocolate producers in the world, giving even the best of French chocolatiers a run for their money.

Other additions to Caputo's chocolate line up include Tuscany's Amedei and the more economical Cuba Venchi from Piedmont, with more from Italy and France to come.

"The Cocoa beans, much like tomatoes and coffee, originated from a dazzling array of single varietals ~ think of a trip to Starbucks and the selection of coffees i.e. "Columbian", "Kenyan" or "Jamaica Blue Mountain" and then compare it with a can of Folger's Crystals and you begin to get the idea.

Well, Caputo's does it again, bringing Domori Single Varietal Chocolates to Utah's collective palate. Noted as "one of the world's finest producers" by the New York Times, Domori is unique. Their practice of isolating heirloom origin cocoa beans in single low yield plantations and conching out the cocoa butter, leaving nothing but cocoa mass and sugar (a very time consuming and spendy process) has created a series of unique powerhouse chocolates with varietal names like Carenero Superior, Sur del Lago, Arriba, Apurimac that are as uniquely sultry, evocative & sexy as the silky flavors that linger and linger on your palate.

This is wine nerd chocolate. This is chocolate for lovers, chocolate for the lonely, chocolate that cures what ails. These are dazzling in their intensity of flavor, aromatics and length of finish and all the geek notes aside. This is great f@%$@ing chocolate."

Domori Innovations: Due to the fact that cross-pollination has caused almost all modern cacao varieties to taste very similar, Domori has dedicated itself to the resurrection of heirloom cacao varietals. Domori has grafted valuable cacao clones and renewed heirloom cacao varietals at the plantations it owns and operates. This subspecies is made up of only criollo cacao clones – the finest in the world. Domori’s annual crop of 90% pure criollo clones represents less than 0.001% of the world’s cocoa crop.

Domori single origin chocolates are produced using heirloom beans harvested by hand at their own low yield plantations. They are 70% cacao mass, sugar and nothing else. There is no cacao butter or emulsifiers like soy lecithin, which are used to cover up impurities in the beans and mistakes in the fermenting and roasting.
 

Formerly Illegal Cheese Found at Caputo's Market & Deli

Unpasteurized cow's milk cheese has been legal in the U.S. for the last few years, but unpasteurized sheep and goat's milk cheeses are just recently were allowed. Some of the suppliers working with Caputo's Market & Deli have figured a method to bring Torta la Serena a fresh unpasteurized sheep's milk cheese with no rennet from Extramadura Spain to the States.

Caputo's Market & Deli has been awarded exclusivity on Torta la Serena in Utah. What's better is the national average price is $26/lb., while the price at Caputo's Market & Deli is relatively low at $15.95/lb

The region of Extramadura, in cheese circles, is renowned for its Tortas. These luxuriously creamy cheeses are memorable - and have been sought after by cheese mongers for centuries. There is Torta la Serena, and Torta del Ceasar, both vary by producer. The flavor is complex - sweet creamy and slightly tangy, with an underlying earthiness.

Aged 30 days, produced with thistle as renneting agent. Juan Porfiao in Badajoz Extramadura is Caputo's producer, and his is the best we have tasted. Made by hand, it starts out deliciously runny and then firms up a bit with maturation. This style cheese is referred to as "amanteigado" - and like the more famous Serra da Estrela from Portugal, this cheese is unctuous, with the raw sheep taste balanced by a bright flowery finish.
