Confections from a Little Pastry Shop in Italy

Caputo’s has just received a shipment from Muzzi Antica Pasticerria. It is a little family owned pastry shop located near Asissi, Umbria, in the heart of Italy. Since 1795 Muzzi has handmade confections that are truly a world apart from the mass produced Italian specialties that are more widely available.

Muzzi’s panettone is prepared using only the finest double zero flour to make some unique varieties such as, pear and chocolate, panettone with Limoncello or Moscato DOC. 

Muzzi’s chocolates include, chocolate dipped candied orange peel, Devil’s Balls (spicy pepper and dark chocolate truffles), two varieties of single origin degustation chocolates, and specialties such as 99% extra dark. One of their specialties has been refined over the centuries. It is a 72% dark chocolate with star anise seed. While most of their dark chocolates are 75%, Mr. Muzzi says, “75% is slightly too dark and overwhelms the finer aspects of the star anise, at 72% the cacao and star anise are in perfect harmony."

Muzzi’s cookies have already won over some of Caputo’s most particular customers. An incorrigible connoisseur of Italian foods from Milan said, “These are simply the only acceptable cantuccini I have ever come across in the U.S.” Whether the cookies are made with chocolate, almond paste or fruit jams, all have a taste and texture which comes from over two centuries of making things by hand in the old world style.  Such qualities cannot be duplicated, or even approximated, by larger industrial producers.

Colosimo's Full Line of Sausages Now Available at Caputo's

Need we say more? Colosimo has been making sausage in Utah for over eighty years. Ralph Colosimo came alone to America in 1921 with the common hope of many immigrants that this country would be his land of opportunity. Ralph carried little in his pocket, but in his head was the recipe on how to prepare, season and create Italian sausage.

 

Grandpa Ralph, like many great chefs, would season food without measuring, by taste and memory of how the sausage was prepared when he was a little boy in Calabria, Italy. Each year the men in the town would make great plans to butcher the hogs, prepare the meat and make the sausage for their families and for the people of Calabria. At night they would cook their creations and people would come from miles around to smell, to taste, to savor!
