Artisan Greek Offerings Dramatically Increased at Caputo's

The refined yet robust Greek cuisine has been enjoyed by Europeans for centuries and is now gaining respect among the culinary elite here in the U.S. In fact, the Food Network now has an Iron Chef that specializes in Greek cuisine (Iron Chef Cora). Fusion chefs across the nation are starting to borrow heavily from the Greek cooking traditions. Upscale Greek restaurants are sprouting up all around the nation; including the very noteworthy Aristo’s located here in Salt Lake City.

Anyone who has traveled to Greece can tell you of the incredible affordable food available there and the sad lack of its availability in specialty stores here. Caputo’s has made the long term commitment to correct this problem. A recent shipment to Caputo’s (1-12-06) tripled the amount of artisan and handmade Greek foods available there.  Examples include:

  • European Union PDO protected Cretan Graviera cheese
  • European Union PDO protected Dodoni Feta (This Feta is simply the best available anywhere and makes a mockery of French, American and other versions)
  • Estate produced olive oil. Hand picked on the mountains of Crete where growing conditions are such that they impart this oil with a powerful fruity flavor usually only found in $30+ bottles of Italian oils ($12.49 500ml)

  • Over a dozen types of olives in 100% natural brine at incredible prices

In an effort to bring fresh organic produce with a regional Italian and Southern European slant to Salt Lake’s increasingly discerning specialty food connoisseur Caputo’s and Ranui Gardens agreed to team up.

Ranui Gardens, one of Utah’s only certified organic growers brings a big advantage to the Caputo’s table. Their artistic and scientific growing methods give their produce a flavor that is rivaled few places in the world. For example, if one were to experience a Ranui Italian heirloom beet, it would be hard if not impossible to enjoy regular beets ever again. The same goes for their incredibly tender greens and other produce.

Although Ranui does not grow year round (Utah naturally has a short growing season), Troy Petersen, Caputo’s daily manager has vowed to keep a focused selection of fresh produce and organic herbs in stock year round. He plans to do this by sourcing items such as fresh figs and blood oranges from growers in California, and other fruits and vegetables from local suppliers.

Caputo’s will also offer the option to grow your own heirloom produce such as the famous San Marzano with a wide array of seeds from all over Italy. These varietals have been grown and refined for centuries for taste not quantity like most modern American produce.
